Playtime and Friends Improve Weight Loss

Southwest Airlines' Spirit magazine's April 2012 issue included two articles--one about playtime and the other about weight loss camaraderie--that mirror our efforts with the Diet Drop project.

When my husband and I were flying back from New Jersey to LA, I couldn’t sleep or reach my book so I read the Southwest Airlines’ magazine, Spirit (April, 2012, issue). Two articles caught my attention and reflected some of the goals and philosophies we share on Diet Drop. The first article is, “It’s Called Play,” which, in a nutshell, states that playtime at any age is essential to a health and creative thinking; and the second is, “Dynamo, Mississippi,” which parallels our emphasis on companionship and how it can greatly increase long-term weight loss success. “The Best Ever!” Russian Borsch Soup Recipe

If you were to ask me to name three traditional Russian dishes I would say, without any hesitation, they are pelmeni, blini (blintz), and borsch. Pelmeni are a variation of dumplings and usually made with a meat inside; blintz are very thin pancakes and are exactly like french crepes or Brazilian panquecas. So  even though any Russian person would say that these two dishes are truly from Russian cuisine, there are still variations of it that can be found throughout the world. However no matter how hard you try to find any dish resembling borsch, I bet you, your search would give no results. Therefore, I can definitely say that borsch truly has a Russian origin and actually is made in Russia very often on an everyday basis.

Leftover Easter Ham Recipe #1: Spring Mix Pasta

Last night my husband had to work the late shift. When I’m on my own for dinner like that, one of two things happens: I either microwave a single serving of something for myself, or I get inspired to do something creative in the kitchen and take advantage of the fact that there won’t be any interruptions. We have a lot of leftover ham from Easter Sunday dinner so I’ve been thinking about all the things I could do with it. In past years, I’ve made all sorts of yummy hot and cold sandwiches with it. But this year, I’m in the mood for something different…and with less bread (one of the things I’m trying to drop off my personal menu in order to lose weight). I mentioned a few potential ideas–such as the ham stock soup I plan to make this week (I will post the recipe)–in my previous post about Easter eating. Looking at what we had to work with in the kitchen last night, this is what I came up with:

Leftover Easter Ham Recipe #1: Spring Mix Pasta

Spring Mix Pasta.

Ingredients: 

– leftover ham cut into small pieces

– boiled noodles (I used spaghetti because that’s what we had but penne would be better for this)

– boiled choclo (or corn), cut off the cob

– a green veggie, such as peas or spinach

– seasoned white sauce (butter, flour, milk, salt, pepper, thyme, cumin)

French Toast Casserole Recipe

As I mentioned in my previous post Holiday Weekend — Easter Paella Lunch, I got a bunch of great recipes from my friend’s book that I plan to put to the test. One of those recipes that got my attention is a french toast casserole. I thought it was very interesting idea, instead of making each toast individually, the bread is soaked in the mix of all the ingredients and baked in the oven.

Ingredients:

– (22 ounce) loaf bread

– 8 large eggs whites

– 2 cups of milk

– 1 cup of orange juice

– 2 tablespoons of maple syrup

– 1 tablespoon of cinnamon

– 1 tablespoon of vanilla extract

– 1 teaspoon of nutmeg

– Dash of salt

– Butter or butter-flavored cooking spray

– 1/2 cup of blueberries.
